Instructions
- Lightly coat the slow cooker with cooking spray for easy cleanup.
- Place the boneless chicken breasts at the bottom of the slow cooker.
- Add chopped carrots, diced celery, and chopped onion on top of the chicken.
- Sprinkle garlic powder, dried thyme, salt, and black pepper over the vegetables.
- Pour in the long-grain white rice evenly over the mix.
- Carefully add the chicken broth, ensuring all ingredients are submerged.
- Cover the slow cooker and set it to cook on low for 8 hours or high for 4 hours.
- Once cooked, remove the chicken breasts, shred them using two forks, and return to the soup.
- Stir in the frozen peas and lemon juice for extra flavor.
- Ladle the soup into bowls and garnish with fresh parsley, if desired.
