  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Lightly coat the slow cooker with cooking spray for easy cleanup.
  2. Place the boneless chicken breasts at the bottom of the slow cooker.
  3. Add chopped carrots, diced celery, and chopped onion on top of the chicken.
  4. Sprinkle garlic powder, dried thyme, salt, and black pepper over the vegetables.
  5. Pour in the long-grain white rice evenly over the mix.
  6. Carefully add the chicken broth, ensuring all ingredients are submerged.
  7. Cover the slow cooker and set it to cook on low for 8 hours or high for 4 hours.
  8. Once cooked, remove the chicken breasts, shred them using two forks, and return to the soup.
  9. Stir in the frozen peas and lemon juice for extra flavor.
  10. Ladle the soup into bowls and garnish with fresh parsley, if desired.
