Ingredients

- 1 pound ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup diced bell peppers
- 1 onion, chopped
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef over medium heat; drain excess fat.
- Transfer the browned beef to the slow cooker.
- Add the beans, corn, diced tomatoes, taco seasoning, bell peppers, onion, salt, and pepper; stir to combine.
- Cover and cook on low for 6–8 hours.
- Before serving, sprinkle cheese on top and cover until melted.
- Serve hot.
Notes
Consider adding jalapeños for extra spice or broiling for a crispy cheese topping.
