Description

A hearty and comforting casserole made with ground beef, beans, corn, and spices, perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced bell peppers
  • 1 onion, chopped
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef over medium heat; drain excess fat.
  2. Transfer the browned beef to the slow cooker.
  3. Add the beans, corn, diced tomatoes, taco seasoning, bell peppers, onion, salt, and pepper; stir to combine.
  4. Cover and cook on low for 6–8 hours.
  5. Before serving, sprinkle cheese on top and cover until melted.
  6. Serve hot.

Notes

Consider adding jalapeños for extra spice or broiling for a crispy cheese topping.
