Description

A comforting dish that combines ground beef, tender potatoes, and creamy cheese, perfect for family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • 2 cups diced potatoes
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet ranch seasoning
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with onions and garlic. Drain excess fat.
  2. In the slow cooker, combine the cooked beef, black beans, diced tomatoes, diced potatoes, ranch seasoning, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or until potatoes are tender.
  5. About 15 minutes before serving, sprinkle shredded cheese on top and let it melt.
  6. Serve hot.

Notes

For a healthier option, swap white potatoes for sweet potatoes. You can also customize with different cheeses or add diced bell peppers.
