- 1 lb ground beef
- 1 can black beans, drained
- 1 can diced tomatoes
- 2 cups diced potatoes
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet ranch seasoning
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef with onions and garlic. Drain excess fat.
- In the slow cooker, combine the cooked beef, black beans, diced tomatoes, diced potatoes, ranch seasoning, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or until potatoes are tender.
- About 15 minutes before serving, sprinkle shredded cheese on top and let it melt.
- Serve hot.
Notes
For a healthier option, swap white potatoes for sweet potatoes. You can also customize with different cheeses or add diced bell peppers.
