Comforting slow-cooked chicken infused with herbs, lemon, and garlic. Perfect for busy weeknight dinners.
Ingredients

- 2 lbs boneless skinless chicken breast or thighs
- 1 onion, thinly sliced
- ¼ cup chicken broth
- 1 lemon, juiced (about 3 tablespoons)
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 ½ teaspoons dried oregano
- 1 ½ teaspoons dried thyme
- 1 teaspoon fine sea salt
- ½ teaspoon black pepper
Instructions
- Place the chicken in the bottom of the slow cooker.
- Add the thinly sliced onion on top of the chicken.
- In a small bowl, whisk together the chicken broth, lemon juice, garlic, olive oil, oregano, thyme, sea salt, and pepper.
- Pour the mixture evenly over the chicken and onions in the slow cooker.
- Put the lid on the slow cooker and cook on LOW for 300-360 minutes or HIGH for 180-240 minutes until the chicken is tender, or until the internal temperature reaches 165°F/75°C.
- Once cooked, shred the chicken with two forks right in the slow cooker so it can soak up the juices. Serve warm.
Notes
Customize with additional vegetables like bell peppers or zucchini. For a thicker sauce, remove the lid for the final 30 minutes of cooking.
