- 2 pounds boneless, skinless chicken thighs
- 1 medium sweet or yellow onion, thinly sliced
- ½ cup chicken broth (or bone broth)
- 3 tablespoons fresh lemon juice
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- Cooked rice, quinoa, or pita (for serving)
- Fresh dill (for garnish)
- Cherry tomatoes (for serving)
- Sliced cucumbers (for serving)
- Kalamata olives (for serving)
- Tzatziki sauce (for serving)
- Lemon wedges (for serving)
Instructions
- Place the chicken thighs in the bottom of the slow cooker.
- Top with the sliced onions, ensuring they are evenly spread over the chicken.
- In a small bowl, whisk together the chicken broth, lemon juice, olive oil, minced garlic, oregano, thyme, sea salt, and black pepper.
- Pour this mixture evenly over the chicken and onions.
- Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until the chicken is tender and reaches 165°F internally.
- Once cooked, shred the chicken directly in the slow cooker or remove it to slice. Stir everything together to combine with the juices.
- Serve your Greek chicken over rice, in pitas, or alongside fresh veggies and tzatziki. Garnish with fresh dill and lemon wedges as desired.
Notes
For a fresher flavor, consider using fresh herbs instead of dried. Adding a splash more broth can restore juiciness if the chicken turns out drier than expected.
