Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup white rice
- 2 cups chicken broth
- 1 lemon (juiced and zested)
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup frozen peas (optional)
Instructions
- Add the chicken breasts, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper to the slow cooker.
- Drizzle olive oil over the top.
- Cover and cook on low for 6-8 hours or high for 4-5 hours until chicken is cooked through.
- Stir in the rice and peas about 30 minutes before serving.
- Continue to cook until rice is tender.
- Fluff with a fork and serve warm.
Notes
For added flavor, garnish with extra lemon slices or fresh herbs when serving. Store leftovers in the refrigerator for up to 4 days.
