Description

A comforting dish combining tender chicken breasts, flavorful herbs, and creamy rice, all cooked slowly for an exquisite dining experience.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup frozen peas (optional)

Instructions

  1. Add the chicken breasts, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper to the slow cooker.
  2. Drizzle olive oil over the top.
  3. Cover and cook on low for 6-8 hours or high for 4-5 hours until chicken is cooked through.
  4. Stir in the rice and peas about 30 minutes before serving.
  5. Continue to cook until rice is tender.
  6. Fluff with a fork and serve warm.

Notes

For added flavor, garnish with extra lemon slices or fresh herbs when serving. Store leftovers in the refrigerator for up to 4 days.
