Description

A comforting dish featuring succulent chicken thighs and fluffy rice, infused with lemon and herbs, all cooked in a slow cooker for a flavorful, tender meal.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 ½ cups long grain white rice, rinsed
  • 2 ½ cups chicken broth
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 tablespoon lemon zest
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt & black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional: lemon wedges for serving

Instructions

  1. Season the bone-in, skin-on chicken thighs with salt and pepper.
  2. Sear the chicken thighs skin-side down in a skillet with olive oil for approximately 4-5 minutes until golden brown. Flip and sear the opposite side for another 2 minutes.
  3. Prepare the slow cooker by adding rinsed rice, chicken broth, lemon juice, lemon zest, minced garlic, dried oregano, and dried thyme.
  4. Combine the seared chicken thighs on top of the rice mixture in the slow cooker.
  5. Cook on low for 4-5 hours, or until the rice is tender and the chicken is fully cooked.
  6. Garnish with fresh parsley and serve with optional lemon wedges for a zesty finish.

Notes

For added flavor, consider marinating the chicken in olive oil, lemon juice, and herbs a few hours before cooking. Feel free to add seasonal vegetables to the rice for extra nutrition.
