- 4 bone-in, skin-on chicken thighs
- 1 ½ cups long grain white rice, rinsed
- 2 ½ cups chicken broth
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 tablespoon lemon zest
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt & black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
- Optional: lemon wedges for serving
Instructions
- Season the bone-in, skin-on chicken thighs with salt and pepper.
- Sear the chicken thighs skin-side down in a skillet with olive oil for approximately 4-5 minutes until golden brown. Flip and sear the opposite side for another 2 minutes.
- Prepare the slow cooker by adding rinsed rice, chicken broth, lemon juice, lemon zest, minced garlic, dried oregano, and dried thyme.
- Combine the seared chicken thighs on top of the rice mixture in the slow cooker.
- Cook on low for 4-5 hours, or until the rice is tender and the chicken is fully cooked.
- Garnish with fresh parsley and serve with optional lemon wedges for a zesty finish.
Notes
For added flavor, consider marinating the chicken in olive oil, lemon juice, and herbs a few hours before cooking. Feel free to add seasonal vegetables to the rice for extra nutrition.
