A comforting and flavorful pepper steak dish made in a slow cooker, featuring tender beef and vibrant bell peppers, perfect for busy weeknight dinners.


Ingredients

  • 1 lb flank steak, sliced
  • 2 tablespoons sesame oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons chili sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. In a slow cooker, combine the sliced flank steak, bell pepper, onion, and garlic.
  2. In a small bowl, mix together the sesame oil, soy sauce, chili sauce, cornstarch, and water. Pour the mixture over the beef and vegetables.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meat is tender.
  4. If the sauce is too thin, mix a little more cornstarch with water and stir into the slow cooker for the last 30 minutes of cooking.
  5. Season with salt and pepper to taste and serve over cooked rice.

Notes

For extra flavor, consider marinating the flank steak in the sauce for a few hours before cooking.
