- 1 Lime (Juice from a freshly squeezed lime)
- 2 cloves Garlic (Minced)
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika

Instructions
- Place your boneless chicken breasts or thighs in the slow cooker.
- Add the corn, cream cheese, Cotija cheese, lime juice, minced garlic, chili powder, smoked paprika, and onion powder on top of the chicken.
- Gently mix the ingredients, ensuring the chicken is well coated.
- Set the slow cooker to low and let it cook for 360-480 minutes.
- Once cooking is complete, shred the chicken using two forks and stir it back into the creamy mixture.
- Serve hot, garnished with fresh cilantro if desired.
