Ingredients

  • 2 lbs carrots
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and cut them in half.
  3. Boil the carrots in salted water for about 10 minutes until fork-tender.
