- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the carrots and cut them in half.
- Boil the carrots in salted water for about 10 minutes until fork-tender.
- Drain and place the carrots on a baking sheet.
- Use a fork or the bottom of a glass to gently smash each carrot.
- Drizzle with olive oil, sprinkle with minced garlic, and season with salt and pepper.
- Roast in the oven for 20-25 minutes until crispy and golden.
- Remove from the oven and sprinkle with Parmesan cheese.
- Garnish with fresh parsley before serving.
