- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 large onion, thinly sliced
- 1 large green bell pepper, thinly sliced
- 1 large red bell pepper, thinly sliced
- 1 teaspoon (5 ml) smoked paprika (5 grams)
- 1 teaspoon (5 ml) garlic powder (5 grams)
- 1 teaspoon (5 ml) onion powder (5 grams)
- Salt to taste
- Black pepper to taste
- 4 hoagie rolls
- 8 slices provolone cheese
- 2 tablespoons (30 ml) mayonnaise (30 milliliters)
Instructions
- Preheat your smoker to 225°F (107°C).
- Season the venison steak with smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Place the venison steak in the smoker and smoke for about 1 to 1.5 hours until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove the venison from the smoker and let it rest for 10 minutes.
- While the venison rests, heat olive oil in a large skillet over medium heat.
- Add the sliced onions, green bell pepper, and red bell pepper to the skillet.
- Sauté the vegetables until they are soft and slightly caramelized, about 8-10 minutes.
- Slice the rested venison steak thinly across the grain.
- Add the sliced venison to the skillet with the vegetables and toss to combine.
- Preheat your oven to 350°F (175°C).
- Slice the hoagie rolls open and spread mayonnaise on the inside of each roll.
- Evenly distribute the venison and vegetable mixture onto the hoagie rolls.
- Top each sandwich with two slices of provolone cheese.
- Place the sandwiches on a baking sheet and bake in the preheated oven for 5-7 minutes until the cheese is melted.
- Remove from the oven and serve immediately.
