  • 1 large red bell pepper, thinly sliced
  • 1 teaspoon (5 ml) smoked paprika (5 grams)
  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1 teaspoon (5 ml) onion powder (5 grams)
  • Salt to taste
  • Black pepper to taste
  • 4 hoagie rolls
  • 8 slices provolone cheese
  • 2 tablespoons (30 ml) mayonnaise (30 milliliters)

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Season the venison steak with smoked paprika, garlic powder, onion powder, salt, and black pepper.
  3. Place the venison steak in the smoker and smoke for about 1 to 1.5 hours until the internal temperature reaches 135°F (57°C) for medium-rare.
  4. Remove the venison from the smoker and let it rest for 10 minutes.
  5. While the venison rests, heat olive oil in a large skillet over medium heat.
  6. Add the sliced onions, green bell pepper, and red bell pepper to the skillet.
  7. Sauté the vegetables until they are soft and slightly caramelized, about 8-10 minutes.
  8. Slice the rested venison steak thinly across the grain.
  9. Add the sliced venison to the skillet with the vegetables and toss to combine.
  10. Preheat your oven to 350°F (175°C).
  11. Slice the hoagie rolls open and spread mayonnaise on the inside of each roll.
  12. Evenly distribute the venison and vegetable mixture onto the hoagie rolls.
  13. Top each sandwich with two slices of provolone cheese.
  14. Place the sandwiches on a baking sheet and bake in the preheated oven for 5-7 minutes until the cheese is melted.
  15. Remove from the oven and serve immediately.
