- 2 lbs venison tenderloin
- 2 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1/4 cup pure maple syrup
- 3 tbsp Dijon mustard
- 2 tbsp smoked paprika
- 1 tbsp fresh thyme leaves
- 2 cloves garlic, minced
- 1 tsp ground black pepper
Instructions
- Remove venison from refrigerator 30 minutes before cooking
- Pat meat dry and season with salt and pepper
- Prepare glaze by mixing maple syrup, Dijon mustard, smoked paprika, thyme, garlic, and black pepper
- Sear tenderloin in hot olive oil for 2-3 minutes per side
- Reduce heat and brush with glaze
- Cook for 8-10 minutes, continually basting
- Rest meat for 10 minutes before slicing
- Serve with additional glaze drizzled on top
