  • 1/2 tsp freshly ground black pepper

  • 3 tbsp Dijon mustard
  • 2 tbsp smoked paprika
  • 1 tbsp fresh thyme leaves
  • 2 cloves garlic, minced
  • 1 tsp ground black pepper

Instructions

  • Remove venison from refrigerator 30 minutes before cooking
  • Pat meat dry and season with salt and pepper
  • Prepare glaze by mixing maple syrup, Dijon mustard, smoked paprika, thyme, garlic, and black pepper
  • Sear tenderloin in hot olive oil for 2-3 minutes per side
  • Reduce heat and brush with glaze
  • Cook for 8-10 minutes, continually basting
  • Rest meat for 10 minutes before slicing
