Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine olive oil, minced garlic, fresh herbs, and a generous pinch of salt and pepper.
- Add chicken to the bowl, ensuring every piece receives an even coating of the marinade.
- Arrange the chicken in a roasting pan surrounded by chopped vegetables, if desired.
- Roast the chicken for about 45-60 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before serving.
