- 1 pound (454 g) ground beef sausage
- 1/2 cup (120 ml) diced onion
- 1 jalapeno, minced
- 1/3 cup (80 ml) all-purpose flour
- 2 3/4 cup (660 ml) s milk
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) pepper
- 10 large eggs
- 2 tablespoon (30 ml) s butter
- 2 cup (480 ml) s cooked tater tots
- 1 cup (240 ml) shredded Pepper Jack cheese
- 1 cup (240 ml) shredded cheddar cheese
- 10 fajita-size flour tortillas
Instructions
- Put the ground beef sausage into a large nonstick skillet on medium-high heat. Break it apart as it browns.
- When it’s halfway done, toss in the diced onion and minced jalapeno.
- Use a slotted spoon to remove 1 cup of the sausage, onion, and jalapeno mix, and put it aside.
- Return the skillet to the heat and scatter the flour over the remaining sausage mix. Stir and cook for 1 minute.
- Slowly pour in the milk while whisking continuously. Let it simmer until it thickens. Take it off the heat.
- Set your oven to 350 degrees and lightly coat a 9×13-inch baking dish with grease.
- Beat the eggs, adding salt for flavor. In a nonstick pan, melt the butter and scramble the eggs. Take them off the heat when they’re still a bit runny, as they’ll finish cooking in the oven.
- In a medium bowl, mix the reserved cup of sausage mixture with the cooked tater tots, scrambled eggs, and half of both the Pepper Jack and cheddar cheeses.
- Spoon about 1/2 cup of this filling along the center of each tortilla. Roll them up and lay them seam-side down in the greased baking dish.
- Pour the sausage gravy over the top. Scatter the remaining cheese over it. Bake for 30 to 40 minutes.
