  • 1 jalapeno, minced
  • 1/3 cup (80 ml) all-purpose flour
  • 2 3/4 cup (660 ml) s milk
  • 1/4 teaspoon (1 ml) salt
  • 1/4 teaspoon (1 ml) pepper
  • 10 large eggs
  • 2 tablespoon (30 ml) s butter
  • 2 cup (480 ml) s cooked tater tots
  • 1 cup (240 ml) shredded Pepper Jack cheese
  • 1 cup (240 ml) shredded cheddar cheese
  • 10 fajita-size flour tortillas

Instructions

  1. Put the ground beef sausage into a large nonstick skillet on medium-high heat. Break it apart as it browns.
  2. When it’s halfway done, toss in the diced onion and minced jalapeno.
  3. Use a slotted spoon to remove 1 cup of the sausage, onion, and jalapeno mix, and put it aside.
  4. Return the skillet to the heat and scatter the flour over the remaining sausage mix. Stir and cook for 1 minute.
  5. Slowly pour in the milk while whisking continuously. Let it simmer until it thickens. Take it off the heat.
  6. Set your oven to 350 degrees and lightly coat a 9×13-inch baking dish with grease.
  7. Beat the eggs, adding salt for flavor. In a nonstick pan, melt the butter and scramble the eggs. Take them off the heat when they’re still a bit runny, as they’ll finish cooking in the oven.
  8. In a medium bowl, mix the reserved cup of sausage mixture with the cooked tater tots, scrambled eggs, and half of both the Pepper Jack and cheddar cheeses.
  9. Spoon about 1/2 cup of this filling along the center of each tortilla. Roll them up and lay them seam-side down in the greased baking dish.
  10. Pour the sausage gravy over the top. Scatter the remaining cheese over it. Bake for 30 to 40 minutes.
