  • 23 tsp (1015 ml) softened margarine
  • 1 tbsp (15 ml) sugar
  • 2 cups (240 g) flour
  • ½ tsp (2.5 ml) salt
  • 2 tsp (10 ml) baking powder
  • 1 cup (200 g) brown sugar
  • ¼ tsp (1.25 ml) allspice
  • ⅛ tsp (0.6 ml) ground nutmeg
  • 1 tsp (5 ml) ground cinnamon
  • 2 eggs
  • ¾ cup (180 ml) vegetable oil
  • ¼ cup (60 ml) fruit juice
  • 1 ½ cups (225 g) diced peaches (peel first)

Instructions

  1. Coat a 9 x 5-inch loaf pan with margarine and lightly sprinkle with sugar or flour. Set it aside.
  2. Heat the oven to 350 degrees Fahrenheit.
  3. In a large bowl, combine the flour, salt, baking powder, brown sugar, allspice, nutmeg, and cinnamon, and mix well. Set this mixture aside.
  4. In another bowl, beat the eggs, oil, and fruit juice together. Add this mixture to the dry ingredients and stir until just combined, being careful not to over-mix. Gently fold in the diced peaches.
  5. Pour the batter evenly into the greased pan, smoothing the top with a spatula.
  6. Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool on a wire rack for 10 minutes before removing it from the pan. Let it cool completely before slicing.
