- 2–3 tsp (10–15 ml) softened margarine
- 1 tbsp (15 ml) sugar
- 2 cups (240 g) flour
- ½ tsp (2.5 ml) salt
- 2 tsp (10 ml) baking powder
- 1 cup (200 g) brown sugar
- ¼ tsp (1.25 ml) allspice
- ⅛ tsp (0.6 ml) ground nutmeg
- 1 tsp (5 ml) ground cinnamon
- 2 eggs
- ¾ cup (180 ml) vegetable oil
- ¼ cup (60 ml) fruit juice
- 1 ½ cups (225 g) diced peaches (peel first)
Instructions
- Coat a 9 x 5-inch loaf pan with margarine and lightly sprinkle with sugar or flour. Set it aside.
- Heat the oven to 350 degrees Fahrenheit.
- In a large bowl, combine the flour, salt, baking powder, brown sugar, allspice, nutmeg, and cinnamon, and mix well. Set this mixture aside.
- In another bowl, beat the eggs, oil, and fruit juice together. Add this mixture to the dry ingredients and stir until just combined, being careful not to over-mix. Gently fold in the diced peaches.
- Pour the batter evenly into the greased pan, smoothing the top with a spatula.
- Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool on a wire rack for 10 minutes before removing it from the pan. Let it cool completely before slicing.
Notes
- Add a touch of vanilla extract to enhance the flavor of the bread.
- Sprinkle chopped nuts on top of the batter for a crunchy texture.
- Increase the sugar amount for a sweeter loaf, if desired.
