Description

A creamy, cheesy delight made with roasted spaghetti squash, perfect for any gathering.


Ingredients

  • 1 medium spaghetti squash
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle the inside with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast in the oven for about 30-40 minutes or until tender.
  3. While the squash is roasting, heat a skillet over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
  4. When the squash is done, use a fork to scrape the flesh into strands and place in a mixing bowl.
  5. Add shredded cheese, heavy cream, sautéed garlic, and Parmesan to the strands. Mix well.
  6. Transfer the mixture back into the squash halves and top with extra cheese if desired.
  7. Bake for an additional 10-15 minutes until the top is golden and bubbly.
  8. Garnish with fresh parsley and serve warm.

Notes

For a golden finish, broil the gratin for a few minutes, watching closely to avoid burning. Leftovers can be stored in an airtight container for up to three days.
