A creamy, cheesy delight made with roasted spaghetti squash, perfect for any gathering.
Ingredients

- 1 medium spaghetti squash
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle the inside with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast in the oven for about 30-40 minutes or until tender.
- While the squash is roasting, heat a skillet over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
- When the squash is done, use a fork to scrape the flesh into strands and place in a mixing bowl.
- Add shredded cheese, heavy cream, sautéed garlic, and Parmesan to the strands. Mix well.
- Transfer the mixture back into the squash halves and top with extra cheese if desired.
- Bake for an additional 10-15 minutes until the top is golden and bubbly.
- Garnish with fresh parsley and serve warm.
Notes
For a golden finish, broil the gratin for a few minutes, watching closely to avoid burning. Leftovers can be stored in an airtight container for up to three days.
