Description

A low-carb, flavorful alternative to traditional pizza, featuring a crispy spaghetti squash crust topped with your favorite ingredients.


Ingredients

  • 1 medium spaghetti squash
  • 2 eggs
  • 1/2 teaspoon Kosher salt
  • 1 teaspoon Italian seasoning
  • 1/2 cup parmesan cheese (grated)
  • Pizza toppings of choice: pizza sauce, shredded mozzarella, pepperonis

Instructions

  1. Microwave the whole spaghetti squash for five minutes. Flip it over and cook for another five minutes. Let it rest for 5 minutes before slicing.
  2. Slice the squash in half and scoop out the seeds.
  3. Use a fork to shred the squash flesh into “noodles.” Place the shredded squash in a clean kitchen towel to wring out as much excess moisture as possible.
  4. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or spray it with cooking spray.
  5. Whisk together the eggs, Kosher salt, Italian seasoning, and grated parmesan cheese in a large bowl.
  6. Mix the shredded spaghetti squash into the egg mixture until well combined.
  7. Press the mixture into a 10” circle on the parchment-lined baking sheet, smoothing the top evenly.
  8. Bake in the preheated oven for 15-18 minutes or until golden and cooked through.
  9. Remove the crust from the oven and spread it with pizza sauce. Top with mozzarella and desired toppings.
  10. Return the pizza to the oven for an additional 10-12 minutes or until the cheese melts beautifully.
  11. Allow the pizza to cool briefly before slicing and enjoying every flavor-packed bite.

Notes

Experiment with different toppings and cheeses for a unique twist on this recipe. Wringing out the moisture from the spaghetti squash is crucial for a crispy crust.
