- 2 teaspoons pink curing salt (Prague Powder #1)
- ¼ cup cold water
- 1 tablespoon liquid smoke
- Collagen casings (21-22mm)
Instructions
- Prepare ingredients, ensuring ground beef is cold
- Mix ground beef with dry spices thoroughly
- Add cold water and liquid smoke, mix until tacky
- Fold in diced jalapeños and shredded cheese
- Refrigerate mixture for 2-24 hours
- Stuff mixture into collagen casings
- Cook in oven at low temperature until internal temperature reaches 160°F
- Cool at room temperature for 2 hours
- Refrigerate before serving
