Description
A comforting and nutritious vegan soup combining the sweetness of carrots, earthiness of lentils, and a gentle spiciness that warms the soul.
Ingredients

- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 1 teaspoon ground chillies or chili flakes
- 2 cloves garlic, minced
- 2-inch piece of ginger, peeled and minced
- 1 ½ lbs carrots, scrubbed and chopped
- Sea salt and ground black pepper, to taste
- ½ cup split red lentils, rinsed
- 5 cups vegetable stock
- ¼ cup tahini
- 1½ teaspoons toasted sesame oil
- 1 teaspoon Tamari soy sauce
- 2 teaspoons lemon or lime juice
Instructions
- Set a large soup pot over medium heat and toast cumin and coriander seeds until fragrant, about 45 seconds to a minute. Transfer to a plate and grind into a powder.
- Return the pot to heat, add olive oil, then sauté the chopped onions until soft and translucent, about 7-8 minutes.
- Stir in ground spices and cook for one minute, then add garlic and ginger, cooking until fragrant, around 1 minute.
- Add chopped carrots, a generous pinch of salt, and black pepper. Sauté, then mix in the rinsed lentils.
- Pour in vegetable stock and bring to a boil. Lower heat to simmer and cook uncovered until carrots are soft, about 30 minutes.
- Ladle soup into a blender, add tahini, sesame oil, and Tamari. Blend until smooth, adding water if needed.
- Return pureed soup to pot, adjust texture with water if desired, and bring back to a boil. Stir in lemon or lime juice.
- Taste and adjust seasoning. Serve hot, garnished with cilantro, tahini, chili oil, and sesame seeds.
Notes
Feel free to adjust spices and add more vegetables such as sweet potatoes or pumpkin for extra flavor.
