  • 1/2 cup (120 ml) grated Parmesan
  • 1/2 cup (120 ml) shredded Parmesan
  • 2 eggs, whisked
  • 8 ounce (227 g) s uncooked orzo pasta
  • Olive oil
  • Salt
  • Black pepper
  • 1 tablespoon (15 ml) lemon juice
  • 1 teaspoon (5 ml) lemon zest
  • 1 1/2 cup (360 ml) s diced cherry tomatoes
  • 1 clove garlic, pressed through garlic press
  • Squeeze lemon juice
  • Pinch of salt
  • Pinch of black pepper
  • 1 tablespoon (15 ml) julienned or torn basil leaves
  • Olive oil

Instructions

  1. Begin by assembling and preparing all of the ingredients for the garlic parmesan shrimp as outlined in the ingredient list above to ensure they are ready for use.
  2. Place the shrimp in a dish, and add approximately 1 tablespoon of olive oil, a pinch of salt and pepper, the Italian seasoning, garlic, and lemon zest and juice. Mix thoroughly to coat and let it sit for a minimum of 30 to 40 minutes, or even longer if possible.
  3. While the shrimp is marinating, gather and prepare all the ingredients for the lemon orzo as detailed in the ingredient list above, ensuring they are organized and ready for use.
  4. Cook the orzo according to the package instructions, ensuring it is well drained. Transfer it to a bowl, and drizzle with 1 to 2 tablespoons of olive oil. Season with a couple of pinches of salt and black pepper, along with the lemon juice and zest, and parmesan (if included). Stir until everything is evenly mixed, and cover to keep warm or let it reach room temperature.
  5. Next, gather and prepare your tomato-basil relish ingredients as detailed in the ingredient list above, making sure they are organized and ready for use.
  6. Combine all the relish ingredients in a small bowl and stir with a spoon until everything is well coated. Keep chilled or at room temperature until served.
