- 2 teaspoon (10 ml) s white vinegar – or rice vinegar
- 1 teaspoon (5 ml) ground black pepper
- 1 teaspoon (5 ml) sesame oil
- 1 teaspoon (5 ml) sugar
Instructions
- Slice the chicken into small, bite-sized portions, either as cubes or thin strips, according to your preference.
- Combine all ingredients designated for marinating the chicken in a bowl. Stir well before adding the chicken pieces. Mix thoroughly until the chicken absorbs the marinade. Allow it to rest for 10 minutes.
- In a separate bowl, whisk together all ingredients listed for the sauce. Set this aside.
- Warm 3 tablespoons of vegetable oil in a large non-stick or well-seasoned skillet or wok over medium-high heat. Gently add the chicken, spreading it evenly in a single layer. Avoid overcrowding the pan; cook in batches if necessary.
- Stir and cook the chicken for 4 to 6 minutes, depending on thickness, until thoroughly cooked. Transfer to a plate and set aside.
- In the same pan, add the remaining tablespoon of oil, then toss in the bell pepper, onion, ginger, and garlic. Stir-fry for 2 minutes, stirring frequently. Add the jalapeños and continue stirring for an additional 2 minutes.
- Return the cooked chicken and its juices to the skillet or wok. Stir the prepared sauce once more, then pour it over the chicken and vegetables.
- Continue cooking and stirring for 2 to 4 minutes until the sauce thickens.
- Turn off the heat and serve the dish with a side of rice. Enjoy!
Notes
- For a healthier twist, opt for chicken breast over thighs.
- To crank up the spiciness, increase jalapenos or keep the seeds in.
- For a thicker sauce, blend an extra teaspoon of cornstarch with water.
