A cozy take on sushi, this spicy salmon sushi bake combines fresh salmon, zesty Sriracha, and tender sushi rice into a comforting dish that everyone can enjoy.


Ingredients

  • 2 cups sushi rice (uncooked)
  • 2.5 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 lb fresh salmon fillet (skinless and diced)
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce (or to taste)
  • 1 teaspoon sesame oil
  • 1/2 cup green onions (chopped, plus extra for garnish)
  • 1 sheet nori (cut into small strips)
  • Tobiko (optional for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the sushi rice under cool water until the water runs clear.
  3. Combine the rice with water and cook according to the package instructions.
  4. Fluff the cooked rice and fold in a mixture of rice vinegar, sugar, and salt.
  5. Spread the seasoned rice evenly in a prepared baking dish.
  6. Mix diced salmon, mayonnaise, Sriracha, sesame oil, and green onions in a bowl until well blended.
  7. Spread the salmon mixture over the rice.
  8. Bake for 25-30 minutes until golden on top and salmon is cooked through.
  9. Garnish with additional green onions, nori strips, and tobiko.

Notes

Chill the salmon before dicing for easier cutting. You can customize garnishes to enhance flavor and presentation.
