Ingredients

- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 4 flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add fresh spinach and sauté until wilted.
- Remove spinach from the skillet and set aside.
- Place a tortilla in the skillet, add a layer of wilted spinach and crumbled feta cheese.
- Top with another tortilla.
- Cook until the bottom is golden brown, then flip to cook the other side.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
