Ingredients

  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add fresh spinach and sauté until wilted.
  3. Remove spinach from the skillet and set aside.
  4. Place a tortilla in the skillet, add a layer of wilted spinach and crumbled feta cheese.
  5. Top with another tortilla.
  6. Cook until the bottom is golden brown, then flip to cook the other side.
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges and serve warm.
