A flavorful combination of tender chicken breasts topped with a creamy spinach-artichoke mixture, perfect for any family gathering.


Ingredients

  • 2 chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 can artichoke hearts, drained and chopped
  • 1 cup cottage cheese
  • 1/2 cup Parmesan cheese, grated
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Stir in spinach and artichokes, cooking until the spinach wilts.
  4. In a bowl, mix cooked spinach and artichokes with cottage cheese and Parmesan until well combined.
  5. Season chicken breasts with salt and pepper. Place them in a baking dish and spread the spinach-artichoke mixture over the top.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  7. Serve warm and enjoy!

Notes

For added flavor, consider using whole-grain breadcrumbs mixed with the Parmesan as a topping before baking.
