- 2 chicken breasts
- 1 cup fresh spinach, chopped
- 1 can artichoke hearts, drained and chopped
- 1 cup cottage cheese
- 1/2 cup Parmesan cheese, grated
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Stir in spinach and artichokes, cooking until the spinach wilts.
- In a bowl, mix cooked spinach and artichokes with cottage cheese and Parmesan until well combined.
- Season chicken breasts with salt and pepper. Place them in a baking dish and spread the spinach-artichoke mixture over the top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- Serve warm and enjoy!
Notes
For added flavor, consider using whole-grain breadcrumbs mixed with the Parmesan as a topping before baking.
