Ingredients

  • 1 pound split peas
  • 1 ham bone
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas and set aside.
  2. In a large pot, sauté the onion, carrots, and celery until soft.
  3. Add the garlic and cook for another minute.
  4. Add the ham bone, split peas, broth, thyme, salt, and pepper to the pot.
  5. Bring to a boil, then reduce heat and simmer for about 90 to 120 minutes, until the peas are tender.
  6. Remove the ham bone, shred any meat, and return to the soup.
  7. Adjust seasoning to taste before serving.

Notes

For a creamier texture, blend a portion of the soup with an immersion blender. Store leftovers in an airtight container for 3-4 days or freeze for later use.
