Ingredients

- 1 pound split peas
- 1 ham bone
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups chicken or vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Rinse the split peas and set aside.
- In a large pot, sauté the onion, carrots, and celery until soft.
- Add the garlic and cook for another minute.
- Add the ham bone, split peas, broth, thyme, salt, and pepper to the pot.
- Bring to a boil, then reduce heat and simmer for about 90 to 120 minutes, until the peas are tender.
- Remove the ham bone, shred any meat, and return to the soup.
- Adjust seasoning to taste before serving.
Notes
For a creamier texture, blend a portion of the soup with an immersion blender. Store leftovers in an airtight container for 3-4 days or freeze for later use.
