For the Cilantro Cream Sauce:
- 1/2 cup Greek yogurt
- 1/2 cup sour cream
- 1 cup fresh cilantro leaves and stems
- 2 tablespoons lime juice
- 1 clove garlic
- 1/2 jalapeรฑo, seeds removed
- 1/4 teaspoon salt
For the Bowl Assembly:
- 2 cups cooked rice
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup crumbled cotija or feta cheese
- Lime wedges for serving
- Additional cilantro for garnish
Instructions
- Marinate the Steak: Combine olive oil, lime juice, garlic, and seasonings. Coat steak and marinate for 30 minutes.
- Prepare Cilantro Sauce: Blend all sauce ingredients until smooth.
- Roast Corn: Toss corn with oil and seasonings, roast at 425ยฐF for 15-20 minutes.
- Cook Steak: Cook in hot skillet 4-5 minutes per side for medium-rare.
- Rest and Slice: Let steak rest 5 minutes before slicing against the grain.
- Assemble: Layer rice, steak, corn, vegetables, and sauce in bowls. Garnish with cheese and cilantro.
