Ingredients

  • 1 small red onion, thinly sliced
  • 1 tbsp avocado or olive oil
  • 8 cups romaine lettuce, roughly chopped
  • Blue cheese crumbles (optional)
  • 4 large eggs, hard-boiled and peeled
  • 8 slices nitrate-free bacon
  • Sea salt and cracked black pepper
  • 1 large avocado, thinly sliced
  • 1 cup cherry tomatoes, sliced in half
  • 1.25 lb flank steak or strip steak

Instructions

  1. In a large bowl, layer the romaine lettuce, cherry tomatoes, sliced onions, hard-boiled eggs, and crumbled bacon.
  2. Peel and slice the avocado, arranging the slices around the salad.
  3. Cook the steak, let it rest, then slice and place it on top of the salad.
  4. Serve the salad drizzled with avocado dressing or on the side.
