  • 6 small flour tortillas
  • ½ cup granulated sugar
  • 1 tbsp ground cinnamon
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream
  • 1 cup fresh or frozen strawberries, chopped
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat your oven to 375°F.
  2. Mix the granulated sugar and ground cinnamon together until combined.
  3. Brush the flour tortillas with melted butter and coat them with the cinnamon-sugar mixture.
  4. Drape each tortilla over the oven rack to form a taco shape.
  5. Bake for 8-10 minutes until they become crisp, then remove and allow to cool.
  6. Beat the cream cheese with powdered sugar and vanilla extract until smooth.
  7. Whip the heavy cream until stiff peaks form.
  8. Fold the whipped cream into the cream cheese mixture.
  9. Combine the chopped strawberries, granulated sugar, and lemon juice in a saucepan.
  10. Simmer until the strawberries release their juices, then stir in the cornstarch slurry and cook until thickened.
  11. Assemble the tacos by piping the cheesecake filling into each shell and topping with strawberry sauce. Serve immediately.
