Delicious Crab Stuffed Catfish: A Southern Comfort Recipe

Description

Tender catfish fillets stuffed with a rich crab, cheese, spinach, and shrimp filling — baked to perfection and served with tangy remoulade. A true taste of the American South.


Ingredients

2 catfish fillets (67 oz each)

1 pound lump crabmeat

1/2 pound shrimp, diced

1 cup grated cheese (cheddar, Monterey Jack, or blend)

1 cup fresh spinach, chopped

6 tablespoons butter

1 small onion, diced

1/4 cup celery, diced

1/4 cup green bell pepper, diced

3 cloves garlic, minced

2 tablespoons lemon juice

1 teaspoon Cajun seasoning

1 teaspoon hot sauce

1 1/2 cups panko breadcrumbs

Salt and pepper to taste

Paprika for garnish

Olive oil for brushing

Remoulade Sauce:

1/2 cup dill pickle relish

1/2 cup mayonnaise

1/4 cup onion, diced

2 tbsp celery, diced

2 tbsp red bell pepper, diced

2 tbsp fresh parsley, chopped

1 tbsp ketchup

1 tbsp Dijon mustard

2 cloves garlic, minced

1 tsp prepared horseradish

1 tsp fresh lemon juice

1 tsp hot sauce

Salt and black pepper to taste


Instructions

1. Preheat oven to 375°F (190°C). Lightly grease 9×13-inch baking dish.

2. In skillet, melt butter. Sauté onion, celery, bell pepper, and garlic until softened.

3. Stir in lemon juice, Cajun seasoning, hot sauce. Fold in crabmeat, shrimp, cheese, spinach, and breadcrumbs. Season with salt and pepper. Let cool.

4. Butterfly catfish fillets to create pocket. Season with salt, pepper, and paprika.

5. Stuff each fillet with crab mixture. Fold fillet over and place in baking dish.

6. Brush tops with olive oil and sprinkle with paprika.

7. Bake 20-25 mins until fish flakes easily and internal temp reaches 145°F.

8. Meanwhile, blend all remoulade sauce ingredients in food processor until smooth.

9. Serve stuffed catfish hot, garnished with herbs and remoulade on the side.

Notes

Use fresh catfish fillets for best flavor.

Let stuffing cool before filling fish.

Do not overstuff — maintain balance.

For dairy-free, omit cheese or sub vegan cheese.

Pairs well with corn on the cob and roasted potatoes.
