  • Maple syrup – 2 tablespoons (30 ml) (30 milliliters)
  • Lemon juice – 1 tablespoon (15 ml) (15 milliliters)
  • Fresh thyme leaves – 1 tablespoon (15 ml) (2 grams)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt, black pepper, and garlic powder.
  3. In a bowl, mix cream cheese and shredded mozzarella cheese until well combined.
  4. Add finely chopped jalapeño pepper to the cheese mixture and mix thoroughly.
  5. Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  6. Stuff each chicken breast with an equal portion of the cheese and jalapeño mixture.
  7. Secure the openings with toothpicks to prevent the filling from spilling out.
  8. Heat olive oil in a large oven-safe skillet over medium-high heat.
  9. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  10. Remove the skillet from heat and set aside.
  11. In a small saucepan, combine blackberries, honey, lemon juice, and fresh thyme leaves.
  12. Cook the blackberry mixture over medium heat, stirring occasionally, until the berries soften and the sauce thickens.
  13. Pour the blackberry sauce over the seared chicken breasts in the skillet.
  14. Transfer the skillet to the preheated oven.
  15. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
