Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt, black pepper, and garlic powder.
- In a bowl, mix cream cheese and shredded mozzarella cheese until well combined.
- Add finely chopped jalapeño pepper to the cheese mixture and mix thoroughly.
- Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Stuff each chicken breast with an equal portion of the cheese and jalapeño mixture.
- Secure the openings with toothpicks to prevent the filling from spilling out.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Remove the skillet from heat and set aside.
- In a small saucepan, combine blackberries, honey, lemon juice, and fresh thyme leaves.
- Cook the blackberry mixture over medium heat, stirring occasionally, until the berries soften and the sauce thickens.
- Pour the blackberry sauce over the seared chicken breasts in the skillet.
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove the toothpicks before serving.
- Serve the stuffed chicken with a generous spoonful of the blackberry jalapeño sauce on top.
