  • For Securing and Cooking:
  • Kitchen twine
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 2 tablespoons balsamic vinegar

Instructions

  1. Butterfly the flank steak horizontally, creating one larger, thinner piece.
  2. Pound the meat to ¼-inch thickness and season with spice mixture.
  3. Combine filling ingredients in a bowl.
  4. Spread filling evenly over the steak, leaving a 1-inch border.
  5. Roll the steak tightly, starting from the short end.
  6. Secure with kitchen twine at 1-inch intervals.
  7. Sear in hot skillet until browned on all sides.
  8. Add broth and vinegar, transfer to 375°F oven.
  9. Cook 25-30 minutes for medium-rare (135°F).
  10. Rest for 10-15 minutes before slicing.
