Ingredients

  • 1/2 cup unsalted butter (room temperature)
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup lemon juice (from 23 lemons)
  • 1 tbsp lemon zest (finely grated)
  • 3 large eggs (room temperature)
  • 1 1/2 cups granulated sugar
  • 1/2 cup all-purpose flour (sifted)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish by lining it with parchment paper.
  2. In a bowl, cream the unsalted butter and powdered sugar together until light and fluffy.
  3. Gradually mix in 1 cup of all-purpose flour. Stir until the mixture is just combined.
  4. Press this mixture into the bottom of the prepared baking dish. Bake for 15-20 minutes, or until lightly golden.
  5. In a separate bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and the sifted all-purpose flour until smooth.
  6. Pour the lemon filling over the pre-baked crust. Return to the oven and bake for another 20-25 minutes until set.
  7. Allow the lemon bars to cool completely in the dish before lifting them out using the parchment paper.
  8. Once cool, dust the top with powdered sugar for a finished touch.

For the best results, let the lemon bars cool thoroughly before cutting for cleaner slices.
