- 1/2 cup unsalted butter (room temperature)
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup lemon juice (from 2–3 lemons)
- 1 tbsp lemon zest (finely grated)
- 3 large eggs (room temperature)
- 1 1/2 cups granulated sugar
- 1/2 cup all-purpose flour (sifted)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish by lining it with parchment paper.
- In a bowl, cream the unsalted butter and powdered sugar together until light and fluffy.
- Gradually mix in 1 cup of all-purpose flour. Stir until the mixture is just combined.
- Press this mixture into the bottom of the prepared baking dish. Bake for 15-20 minutes, or until lightly golden.
- In a separate bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and the sifted all-purpose flour until smooth.
- Pour the lemon filling over the pre-baked crust. Return to the oven and bake for another 20-25 minutes until set.
- Allow the lemon bars to cool completely in the dish before lifting them out using the parchment paper.
- Once cool, dust the top with powdered sugar for a finished touch.
Notes
For the best results, let the lemon bars cool thoroughly before cutting for cleaner slices.
