Ingredients

Scale
  • 3 cups (720 ml) granulated sugar (600 grams)
  • 1 cup (240 ml) apple cider vinegar (240 milliliters)
  • 1/2 cup (120 ml) water (120 milliliters)
  • 1 pound (454 g) beef, finely chopped (450 grams)
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 tablespoon (15 ml) pectin powder (10 grams)
  • 1 teaspoon (5 ml) salt (5 grams)

Instructions

  1. Prepare sterilized jars and lids for canning.
  2. In a large pot, combine granulated sugar, apple cider vinegar, and water.
  3. Stir the mixture over medium heat until the sugar dissolves completely.
  4. Add finely chopped jalapeño peppers, red bell pepper, and green bell pepper to the pot.
  5. Stir in the pectin powder and salt, mixing well.
  6. Bring the mixture to a boil over high heat, stirring frequently.
  7. Once boiling, reduce the heat to medium and let it simmer for 10-15 minutes.
  8. Stir occasionally until the jam thickens to your desired consistency.
  9. Remove the pot from heat and carefully ladle the hot jam into sterilized jars.
  10. Leave about 1/4 inch of headspace in each jar.
  11. Wipe the rims of the jars with a clean, damp cloth to remove any residue.
  12. Seal the jars with their lids and process in a boiling water bath for 10 minutes.
  13. Carefully remove the jars from the water bath and let them cool on a towel.
  14. Check that the lids have sealed properly by pressing the center; it should not pop back.
  15. Store the jam in a cool, dark place or refrigerate once opened.

Notes

  • Finely chop the beef for even cooking and to blend seamlessly with other ingredients.
  • Adjust salt to taste, considering flavors will intensify as jam thickens.
  • Use high-quality pectin powder for optimal jam consistency.
