  • 1 teaspoon (5 ml) black pepper (2 grams)
  • 1 teaspoon (5 ml) smoked paprika (2 grams)
  • 1/2 teaspoon (3 ml) cayenne pepper (1 gram)
  • 1/2 teaspoon (3 ml) salt (3 grams)

Instructions

  1. Slice the venison into thin strips, about 1/4 inch thick.
  2. In a large bowl, combine brown sugar, soy sauce, and Worcestershire sauce.
  3. Add liquid smoke, onion powder, garlic powder, and black pepper to the mixture.
  4. Stir in smoked paprika, cayenne pepper, and salt until well combined.
  5. Place the venison strips into the marinade, ensuring they are fully submerged.
  6. Cover the bowl and refrigerate for at least 6 hours or overnight.
  7. Preheat your dehydrator to 160°F (71°C) or your oven to the lowest setting.
  8. Remove venison strips from the marinade and pat dry with paper towels.
  9. Arrange the venison strips in a single layer on dehydrator trays or baking racks.
  10. Dehydrate or bake for 4 to 6 hours, checking periodically for desired dryness.
  11. Once the jerky is firm and dry, remove it from the heat source.
