  • 1 tablespoon soy sauce (15 ml)
  • 1 teaspoon smoked paprika (2.5 g)
  • 1 teaspoon garlic powder (2.5 g)
  • 1/2 teaspoon cayenne pepper (1 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1/4 teaspoon black pepper (0.6 g)
  • 2 jalapeño peppers, finely chopped
  • 1/4 cup crumbled feta cheese (40 g)
  • 1 tablespoon chopped fresh cilantro (15 g)
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut each ear of corn into quarters, creating rib-like pieces.
  3. In a small bowl, mix together the olive oil, honey, and soy sauce.
  4. In another bowl, combine the smoked paprika, garlic powder, cayenne pepper, salt, and black pepper.
  5. Brush the corn ribs with the olive oil mixture, ensuring they’re evenly coated.
  6. Sprinkle the spice mixture over the corn ribs, coating them evenly.
  7. Place the corn ribs on a baking sheet, ensuring they’re spaced out evenly.
  8. Bake in the preheated oven for 20-25 minutes or until the corn is tender and slightly charred.
  9. While the corn is baking, finely chop the jalapeño peppers.
  10. Once the corn ribs are cooked, remove them from the oven.
  11. Sprinkle the chopped jalapeños over the warm corn ribs.
  12. Add the crumbled feta cheese on top of the jalapeños.
  13. Garnish with chopped fresh cilantro.
  14. Serve the corn ribs with lime wedges on the side for squeezing over.
