- 2 tbsp (30 ml) vinegar
- 1 tbsp (15 ml) lemon juice
- 1 tsp (5 ml) lemon zest
- 3–4 fresh birds eye chili or 2 tbsp (30 ml) chili flakes
- 3–4 garlic
- 1 tsp (5 ml) salt
- 1 tbsp (15 ml) cornstarch
Instructions
- Using a food processor, combine the diced pineapple, pineapple juice, garlic, and chilis until smooth.
- In a sturdy pot, heat the blended mixture until it reaches a boil. Incorporate the salt, vinegar, sugar, lemon juice, and zest.
- Lower the heat to maintain a gentle simmer, allowing the sauce to cook for 5 to 7 minutes. Ensure the sugar has fully dissolved. Taste the sauce and adjust as needed.
- In a separate small dish, mix the cornstarch with a bit of water to form a slurry, then incorporate it into the sauce.
- Stir continuously until the sauce thickens. Take it off the heat and allow it to cool down.
