  • 1 teaspoon garlic powder (4 g)
  • 1 teaspoon onion powder (4 g)
  • 1 cup fresh or frozen corn kernels (150 g)
  • 1 jalapeño, seeded and diced
  • 1 red bell pepper, diced
  • 1 cup shredded cheddar cheese (120 g)
  • 2 tablespoon s fresh cilantro, chopped (8 g)
  • Juice of 1 lime

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the bite-sized chicken pieces to the skillet.
  3. Season the chicken with salt, black pepper, garlic powder, and onion powder.
  4. Cook the chicken for about 5-7 minutes, stirring occasionally, until browned and cooked through.
  5. Add the corn kernels, diced jalapeño, and diced red bell pepper to the skillet.
  6. Stir the vegetables and chicken together, cooking for another 5 minutes until the vegetables are tender.
  7. Sprinkle the shredded cheddar cheese evenly over the chicken and vegetable mixture.
  8. Cover the skillet and allow the cheese to melt, about 2-3 minutes.
  9. Remove the skillet from heat and sprinkle the chopped fresh cilantro on top.
  10. Squeeze the juice of 1 lime over the dish before serving.
