- 1 teaspoon onion powder (4 g)
- 1 cup fresh or frozen corn kernels (150 g)
- 1 jalapeño, seeded and diced
- 1 red bell pepper, diced
- 1 cup shredded cheddar cheese (120 g)
- 2 tablespoon s fresh cilantro, chopped (8 g)
- Juice of 1 lime
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the bite-sized chicken pieces to the skillet.
- Season the chicken with salt, black pepper, garlic powder, and onion powder.
- Cook the chicken for about 5-7 minutes, stirring occasionally, until browned and cooked through.
- Add the corn kernels, diced jalapeño, and diced red bell pepper to the skillet.
- Stir the vegetables and chicken together, cooking for another 5 minutes until the vegetables are tender.
- Sprinkle the shredded cheddar cheese evenly over the chicken and vegetable mixture.
- Cover the skillet and allow the cheese to melt, about 2-3 minutes.
- Remove the skillet from heat and sprinkle the chopped fresh cilantro on top.
- Squeeze the juice of 1 lime over the dish before serving.
