Ingredients

  • 1 large English cucumber, diced (or 2 Persian cucumbers, diced)
  • 1/4 small red onion, sliced thin
  • 1/4 cup chopped cilantro leaves
  • 1 small jalapeño, sliced thin (optional)
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tbsp lime juice, freshly squeezed
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp crushed red pepper flakes (optional)

Instructions

  1. In a large mixing bowl, combine the diced pineapple, diced cucumbers, sliced red onion, chopped cilantro, and jalapeño if using.
  2. In a separate bowl, whisk together the lime juice, honey or maple syrup, olive oil, salt, ground black pepper, and crushed red pepper flakes if desired.
  3. Drizzle the dressing over the salad, then gently toss to coat all the ingredients evenly.
  4. If you choose to add feta cheese, sprinkle it on top after mixing.
  5. Let the salad sit for a few minutes to allow the flavors to meld before serving.

Notes

For added freshness, chill cucumbers before preparation. Adjust sweetness with more honey or maple syrup as desired.
