- 2 cups diced fresh pineapple
- 1 large English cucumber, diced (or 2 Persian cucumbers, diced)
- 1/4 small red onion, sliced thin
- 1/4 cup chopped cilantro leaves
- 1 small jalapeño, sliced thin (optional)
- 1/4 cup feta cheese, crumbled (optional)
- 2 tbsp lime juice, freshly squeezed
- 1 tbsp honey or maple syrup
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp crushed red pepper flakes (optional)
Instructions
- In a large mixing bowl, combine the diced pineapple, diced cucumbers, sliced red onion, chopped cilantro, and jalapeño if using.
- In a separate bowl, whisk together the lime juice, honey or maple syrup, olive oil, salt, ground black pepper, and crushed red pepper flakes if desired.
- Drizzle the dressing over the salad, then gently toss to coat all the ingredients evenly.
- If you choose to add feta cheese, sprinkle it on top after mixing.
- Let the salad sit for a few minutes to allow the flavors to meld before serving.
Notes
For added freshness, chill cucumbers before preparation. Adjust sweetness with more honey or maple syrup as desired.
