- 4 cups sweet potatoes, cooked and mashed
- 1/2 cup milk
- 1/4 cup butter, melted
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups mini marshmallows
- 1 cup pecans, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes, milk, melted butter, brown sugar, vanilla extract, and salt. Mix well until the mixture is smooth.
- Pour the sweet potato mixture into a greased 9×13 inch baking dish.
- Sprinkle the mini marshmallows and chopped pecans evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.
- Serve warm as a side dish for Thanksgiving or any holiday meal.
Notes
For a sweetener adjustment, taste the mixture while mixing. Using fresh sweet potatoes provides the best flavor.
