Ingredients

- 6 tightly packed cups of green cabbage, finely shredded (about 1/4 head)
- 1 cup of green onion, finely sliced on the diagonal
- 1/2 cup of finely chopped coriander/cilantro leaves
- 1/2 cup of sour cream (substitute plain yogurt if desired)
- 2 tablespoons of mayonnaise (for a lighter option, use 1 tablespoon of olive oil)
- 2 teaspoons of lime zest
- 1 tablespoon of lime juice
- 1/2 teaspoon of cooking salt or kosher salt (halve the amount if using table salt)
Instructions
- In a large bowl, mix together the dressing ingredients: sour cream, mayonnaise (or olive oil), lime zest, lime juice, and salt.
- Add the slaw ingredients: shredded cabbage, green onion, and chopped cilantro to the bowl.
- Toss well using hands or tongs, ensuring the dressing fully coats every ingredient.
- Set the mixture aside for at least an hour to allow the cabbage to wilt and absorb the flavors.
- After an hour, toss the slaw again and integrate it into your favorite tacos.
Notes
For added texture, consider adding shredded carrots or thinly sliced bell peppers. Taco slaw can be made ahead of time, and its flavors meld beautifully when refrigerated.
