- 1/2 cup granulated sugar
- 1/2 cup freshly squeezed lemon juice (about 2 lemons)
- 1 tablespoon lemon zest (from 1 lemon)

- 1/2 cup unsalted butter (cubed)
Instructions
- Beat together the four eggs and half a cup of granulated sugar in a medium-sized saucepan until smooth and well combined.
- Add the half cup of freshly squeezed lemon juice, one tablespoon of lemon zest, and a quarter teaspoon of salt. Beat until fully combined.
- Place the saucepan over low to medium heat and cook for approximately five minutes, whisking continuously until the curd thickens to your desired consistency.
- Turn off the heat and add half a cup of cubed butter, stirring until completely melted and incorporated.
- Strain the curd through a fine mesh sieve into a bowl to eliminate any lumps, then let it cool before transferring it to a jar for refrigeration.
