Ingredients

  • 4 large eggs (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest (from 1 lemon)
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (cubed)

Instructions

  1. Beat together the four eggs and half a cup of granulated sugar in a medium-sized saucepan until smooth and well combined.
  2. Add the half cup of freshly squeezed lemon juice, one tablespoon of lemon zest, and a quarter teaspoon of salt. Beat until fully combined.
  3. Place the saucepan over low to medium heat and cook for approximately five minutes, whisking continuously until the curd thickens to your desired consistency.
  4. Turn off the heat and add half a cup of cubed butter, stirring until completely melted and incorporated.
  5. Strain the curd through a fine mesh sieve into a bowl to eliminate any lumps, then let it cool before transferring it to a jar for refrigeration.
