- 1 pound (454 g) flat-iron steaks
- 12 ounce (340 g) s beef broth
- 2 tablespoon (30 ml) s dried onions
- 1 teaspoon (5 ml) garlic powder
- 2 teaspoon (10 ml) s dried oregano
- 1/8 cup (30 ml) chili powder
- 2 tablespoon (30 ml) s ground cumin
- 2 cup (480 ml) s frozen corn, thawed
- 1 cup (240 ml) bell pepper, chopped
- 1 cup (240 ml) red onion, chopped
- 14 ounce (397 g) s canned black beans, rinsed and drained
- 1 cup (240 ml) radishes, sliced
- 4 whole Roma tomatoes
- 1 ounce (28 g) spicy ranch dressing mix
- 1 cup (240 ml) skim milk
- 2/3 cup (160 ml) salsa
- 1/3 cup (80 ml) plain yogurt
- 1 whole chipotle in adobo, minced
- 1/2 cup (120 ml) green onions, sliced
- 4 ounce (113 g) s 2% extra sharp cheddar cheese, diced
- 2 limes quartered
Instructions
- Place the steaks, beef broth, dried onions, garlic powder, oregano, chili powder, and cumin in a shallow container and let them soak for at least 30 minutes.
- In a large bowl, mix together the corn, bell pepper, red onion, black beans, radishes, and cheddar cheese.
- Remove the core of the tomatoes, slice them into wedges, and put them aside.
- In a small bowl, use a whisk to blend the ranch dressing mix, skim milk, salsa, yogurt, and minced chipotle, then chill until ready to serve.
- Coat a large pan with cooking spray and heat over high heat. Cook the steaks for 5 minutes on each side, then take them off the heat and let them rest.
- Evenly distribute the vegetables onto 4 plates. Position the tomato wedges along the plate edges. Lightly pour the dressing over the vegetables.
- After the steaks have rested, cut them thinly against the grain and place 4 ounces of meat on top of each salad.
- Pour some dressing over the meat and sprinkle with green onions and lime wedges as a garnish.
