- 2–3 fresh jalapeños, chopped
- 1 can (28 oz) crushed tomatoes
- 2 cups beef broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in minced garlic and jalapeños, cooking for another minute until fragrant.
- Incorporate the beef stew meat, browning on all sides.
- Sprinkle in chili powder, cumin, salt, and pepper, coating the meat.
- Pour in crushed tomatoes and beef broth, bringing the mixture to a simmer.
- Cover the pot, reduce heat, and let stew for 2-3 hours until beef is tender.
- Taste and adjust seasonings as needed; serve hot.
Notes
For extra heat, add chopped chipotle peppers or hot sauce. Serve with toppings like chopped cilantro or shredded cheese.
