Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 6 to 8 apples, peeled, cored, and sliced
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 egg yolk (for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. For the crust, combine flour, salt, and sugar in a bowl. Cut in butter until the mixture resembles coarse crumbs.
  3. Stir in water, a tablespoon at a time, until the mixture comes together to form a dough.
  4. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 4 hours.
  5. For the filling, combine sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice in a bowl and toss to coat.
  6. Roll out one disc of dough on a floured surface, then place it in a pie dish. Fill with apple mixture. Roll out the second disc and place over the filling. Seal and cut slits in the top crust for steam to escape.
  7. Brush with egg yolk.
  8. Bake for 15 minutes in the preheated oven, then reduce the temperature to 350°F (175°C) and bake for an additional 35 to 45 minutes, until apples are soft and crust is golden.
  9. Let cool before serving.
