- 1/2 cup (120 ml) granulated sugar
- 1/2 cup (120 ml) packed brown sugar
- 1/2 cup (120 ml) plus 1/4 cup (60 ml) creamy peanut butter
- 1 large egg
- 1 teaspoon (5 ml) vanilla extract
- 1 cup (240 ml) all-purpose flour
- 1 teaspoon (5 ml) baking soda
- 1/4 teaspoon (1 ml) salt
- 1/2 cup (120 ml) quick-cooking oatmeal
- 6 ounce (170 g) s butterscotch chips (about 1 cup (240 ml))
- 1 cup (240 ml) confectioners’ sugar
- 4 tablespoon (60 ml) s milk
Instructions
- Heat your oven to 350 degrees F. Coat a 9-by-13-by-2-inch baking dish with butter.
- With an electric mixer, blend together the butter, white sugar, brown sugar, and ½ cup of peanut butter until smooth.
- Incorporate the egg and vanilla extract into the mixture.
- Combine the flour with the baking soda and salt by sifting them together.
- Add the oatmeal to the flour mixture, then integrate it into the creamed ingredients.
- Evenly distribute the batter in the prepared baking dish.
- Scatter the butterscotch chips over the top of the batter.
- Place in the oven and bake for 20 to 25 minutes, or until the edges are golden brown.
- In a separate bowl, mix the confectioners’ sugar, milk, and the remaining ¼ cup of peanut butter until the mixture is smooth.
- Spread this glaze over the warm bars evenly.
- Let them cool down completely before slicing into square pieces.
