  • 1/2 cup (120 ml) plus 1/4 cup (60 ml) creamy peanut butter
  • 1 large egg
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (240 ml) all-purpose flour
  • 1 teaspoon (5 ml) baking soda
  • 1/4 teaspoon (1 ml) salt
  • 1/2 cup (120 ml) quick-cooking oatmeal
  • 6 ounce (170 g) s butterscotch chips (about 1 cup (240 ml))
  • 1 cup (240 ml) confectioners’ sugar
  • 4 tablespoon (60 ml) s milk

Instructions

  1. Heat your oven to 350 degrees F. Coat a 9-by-13-by-2-inch baking dish with butter.
  2. With an electric mixer, blend together the butter, white sugar, brown sugar, and ½ cup of peanut butter until smooth.
  3. Incorporate the egg and vanilla extract into the mixture.
  4. Combine the flour with the baking soda and salt by sifting them together.
  5. Add the oatmeal to the flour mixture, then integrate it into the creamed ingredients.
  6. Evenly distribute the batter in the prepared baking dish.
  7. Scatter the butterscotch chips over the top of the batter.
  8. Place in the oven and bake for 20 to 25 minutes, or until the edges are golden brown.
  9. In a separate bowl, mix the confectioners’ sugar, milk, and the remaining ¼ cup of peanut butter until the mixture is smooth.
  10. Spread this glaze over the warm bars evenly.
  11. Let them cool down completely before slicing into square pieces.
