  • 23 fresh peaches
  • Runny honey for drizzling
  • 8 oz (227 g) ricotta
  • 1 egg for an egg wash

Instructions

  1. Warm up your oven to 400°F and let the puff pastry defrost.
  2. Divide the puff pastry into equal-sized squares, aiming for six per sheet.
  3. Cut the peaches into uniform slices, aiming for about 4-6 slices per pastry square.
  4. Cover two baking trays with parchment; if you have only one tray, bake in separate rounds.
  5. Pour some honey onto the parchment in six spots, and lay the peach slices over each honey spot.
  6. Spread a spoonful of ricotta on one side of the pastry square, then lay it over the peaches with the ricotta touching the fruit. Do the same with the remaining pastry.
  7. Seal the edges of each pastry with a fork and pierce some holes on top to let steam escape.
  8. Whisk the egg in a small bowl and coat each pastry square with this egg mixture.
  9. Place in the oven for 22-25 minutes until they turn golden and puff up. Allow them to cool briefly, then turn them upside down and serve!
