- 1 package of puff pastry
- 2–3 fresh peaches
- Runny honey for drizzling
- 8 oz (227 g) ricotta
- 1 egg for an egg wash
Instructions
- Warm up your oven to 400°F and let the puff pastry defrost.
- Divide the puff pastry into equal-sized squares, aiming for six per sheet.
- Cut the peaches into uniform slices, aiming for about 4-6 slices per pastry square.
- Cover two baking trays with parchment; if you have only one tray, bake in separate rounds.
- Pour some honey onto the parchment in six spots, and lay the peach slices over each honey spot.
- Spread a spoonful of ricotta on one side of the pastry square, then lay it over the peaches with the ricotta touching the fruit. Do the same with the remaining pastry.
- Seal the edges of each pastry with a fork and pierce some holes on top to let steam escape.
- Whisk the egg in a small bowl and coat each pastry square with this egg mixture.
- Place in the oven for 22-25 minutes until they turn golden and puff up. Allow them to cool briefly, then turn them upside down and serve!
