  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar

  • ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • Pink Dough Ingredients:
  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • Ganache Filling:
  • ½ cup (120 ml) heavy cream
  • ¾ cup (130 g) dark or white chocolate chips, finely chopped
  • 1 tablespoon (14 g) butter (optional)

Instructions

  1. Prepare the chocolate dough: Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  2. Add the egg and vanilla extract, mixing well.
  3. Gradually add flour, cocoa powder, baking soda, salt, and optional espresso powder, stirring until combined.
  4. For the pink dough: Cream butter and sugars until fluffy, then add the egg and vanilla extract.
  5. Gradually incorporate flour, baking soda, salt, and raspberry powder or food coloring into the pink dough.
  6. Chill both doughs in the fridge for 30 minutes.
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop dough into balls, alternating between chocolate and pink. Press a well into each ball.
  9. Bake for 10-12 minutes, re-pressing centers while cookies are warm. Cool cookies on a wire rack.
  10. To prepare ganache, pour hot heavy cream over chopped chocolate and stir until smooth.
  11. Fill each cookie with ganache and decorate if desired. Allow to set before serving.
