- ½ cup (100 g) granulated sugar

- 1 large egg

- ½ cup (45 g) unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon espresso powder (optional)
- Pink Dough Ingredients:
- ½ cup (113 g) unsalted butter, softened
- ½ cup (100 g) granulated sugar
- ½ cup (100 g) brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1½ cups (190 g) all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2–3 teaspoons freeze-dried raspberry powder or pink food coloring
- Ganache Filling:
- ½ cup (120 ml) heavy cream
- ¾ cup (130 g) dark or white chocolate chips, finely chopped
- 1 tablespoon (14 g) butter (optional)
Instructions
- Prepare the chocolate dough: Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add the egg and vanilla extract, mixing well.
- Gradually add flour, cocoa powder, baking soda, salt, and optional espresso powder, stirring until combined.
- For the pink dough: Cream butter and sugars until fluffy, then add the egg and vanilla extract.
- Gradually incorporate flour, baking soda, salt, and raspberry powder or food coloring into the pink dough.
- Chill both doughs in the fridge for 30 minutes.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop dough into balls, alternating between chocolate and pink. Press a well into each ball.
- Bake for 10-12 minutes, re-pressing centers while cookies are warm. Cool cookies on a wire rack.
- To prepare ganache, pour hot heavy cream over chopped chocolate and stir until smooth.
- Fill each cookie with ganache and decorate if desired. Allow to set before serving.
