Ingredients

  • 2 potatoes, diced

  • 2 garlic cloves, minced
  • 6 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
  2. Add beef cubes and brown them on all sides.
  3. Stir in mixed vegetables and potatoes.
  4. Pour in beef broth and add diced tomatoes.
  5. Season with thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 1-1.5 hours, or until beef is tender.
  7. Serve hot with soft dinner rolls.
