- 2 cups mixed vegetables (carrots, celery, green beans)
- 2 potatoes, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 6 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
- Add beef cubes and brown them on all sides.
- Stir in mixed vegetables and potatoes.
- Pour in beef broth and add diced tomatoes.
- Season with thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 1-1.5 hours, or until beef is tender.
- Serve hot with soft dinner rolls.
Notes
Consider adding Worcestershire sauce or soy sauce for a deeper flavor. You can also experiment with seasonal vegetables.
