Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the orzo pasta according to package instructions; drain and let cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, red bell pepper, Kalamata olives, and feta cheese.
  3. Add the cooled orzo to the bowl.
  4. In a separate small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
