  • 12 ounce s (340 g) pasta, uncooked
  • 2 tablespoon s (30 g) unsalted butter
  • 1 tablespoon (15 ml) olive oil
  • 1 cup (240 ml) heavy cream
  • 1 cup (100 g) grated Parmesan cheese
  • 1/2 cup (120 ml) chicken or vegetable broth
  • 1 tablespoon (15 g) minced garlic
  • 1 teaspoon (5 g) onion powder
  • 1 teaspoon (5 g) smoked paprika
  • 1/2 teaspoon (2 g) chili powder
  • 1/2 teaspoon (2 g) black pepper
  • 1/2 teaspoon (2 g) salt
  • 1/4 cup (15 g) fresh parsley, chopped
  • 1/4 teaspoon (1 g) red pepper flakes (optional )
  • 1 cup (100 g) shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add the ground venison to the skillet and cook until browned, breaking it up with a spoon.
  5. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  6. Stir in the onion powder, smoked paprika, chili powder, black pepper, and salt.
  7. Pour in the chicken or vegetable broth, stirring to combine.
  8. Simmer for 5 minutes until the liquid reduces slightly.
  9. In a small saucepan, melt butter over medium heat.
  10. Add heavy cream to the saucepan and heat until warm, stirring occasionally.
  11. Gradually stir in the grated Parmesan cheese until melted and smooth.
  12. Add the red pepper flakes to the cheese sauce, if using.
  13. Combine the cooked pasta, venison mixture, and cheese sauce in a large mixing bowl.
  14. Mix until the pasta is well-coated and ingredients are evenly distributed.
  15. Transfer the pasta mixture to a greased baking dish.
  16. Sprinkle shredded mozzarella cheese evenly over the top of the pasta.
  17. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.
  18. Remove from the oven and let it cool slightly.
  19. Garnish with fresh chopped parsley before serving.
